Cinnamon Raisin Millet Squares

These delicious millet squares are cooked in a fragrant cinnamon and spice infusion.

Millets have numerous health benefits. They are a good source of nutrients, protein and antioxidants. It is gluten-free and may help lower blood sugar and cholesterol levels. These Cinnamon, Raisin Millet Squares can be enjoyed as a snack, dessert or even breakfast.

Ingredients

  • 1 Cup of Organic Millets (Rinsed and drained)

  • 4 Cups Vanilla or Regular Coconut Milk (32 ozs)

  • 2 Tsp Cinnamon

  • 1/4 Tsp Nutmeg

  • 1 Tsp Ginger

  • 1/2 Cup Organic Raisins

  • Pinch of Sea Salt (Optional)



Instructions


1. Rinse and drain the Millets.


2. In a medium pot or saucepan, place Millets on low heat and toast lightly until dry and a shade darker.

3. Increase heat to medium-low. Add coconut milk and raisins. Stir gently and bring to a quick boil.

4. Once boiled, add the remaining ingredients (cinnamon, nutmeg, ginger, salt). Cover and reduce heat to LOW. Simmer stirring gently occasionally, until all liquid is absorbed (about 45 minutes). 5. Remove from heat and let sit, covered, for a few minutes. 4. Transfer into a pan or serving dishes. Garnish with a pinch of cinnamon if desired (sprinkle on top) and refrigerate.


5. Once refrigerated and set, cut into squares.


6. Can be served cold or at room temperature. Enjoy!


Store refrigerated for a few days.
